Dinner Tonight - Yom Kippur

Gmar Chasima Tovah to all my family,  friends, and fans. You should have an easy and meaningful fast and only good things in the year to come. For dinner tonight we are having soup, spaghetti and meatballs and chicken along with a salad and melon (for the electrolytes!) For break fast we are having bagels and spreads. What are you making?

Dinner Tonight - Sweet Lemon Chicken

For dinner tonight I am making Sweet Lemon Chicken with rice and salad. My friend told me this is her all time favorite chicken (thanks Alli!). Hopefully it will be yours too!!!. Enjoy!


Eggs 
cornflakes - crushed or cornflakes crumbs flavored with season salt

coat chicken Pcs. in egg then cornflakes and bake on 400 degrees for 1/2 hour.

1 cup sugar
8 tbs. lemon juice
1/4 tsp paprika
1/4 tsp pepper

Mix all together and pour over chicken. Bake an additional 1/2 hour.

Dinner Tonight - Shabbos 9/21

Very quiet Shabbos this week so we have a small menu. Sesame noodles with grilled chicken, carrot muffins, and salami quiche. We will have Kokosh cake for dessert. Have a beautiful shabbos!!!

Dinner Tonight - Breaded garlic salmon

For dinner tonight I am making Breaded Garlic Salmon with mashed potatoes and a salad. This salmon is so delicious and looks beautiful for hosting. Enjoy!


1/3 cup oil
1/4 cup sugar
1/4 cup yellow mustard
3 tbs vinegar 
4 cloves garlic- crushed
1/2 tsp paprika
1 lb salmon - skinned
1 cup flavored bread crumbs

Mix together the first 6 ingredients.  Put half the mixture aside. Use the other half to coat the salmon. Then dredge in bread crumbs. Bake on 350 for 1/2 hour. When done warm remaining sauce. drizzle over salmon right before serving.

Dinner tonight - Pasta and Crab Salad

For dinner tonight I am making "ketchupy" pasta with crab salad and garlic knots. Its a light meal for after the fast. Enjoy!!!



Crab Salad

Ingredients
-
1/2 cup oil
-
1/4 cup mayonaise
-
1/8 cup red wine vinegar
-
crab meat
-
lettuce
-
cucumbers
-
tomatoes
-
peppers
-
Chow mein noodles


Instructions
Dice up all the veggies and the crab meat.
Mix mayo, oil, and vinegar.
Pour over salad and mix.
Sprinkle with chow mein noodles.



Pasta:

1 box pasta cooked and drained according to box

sautee: 1 large onion and 2 cloves garlic. Add to pasta. Place on low flame and add in 1 cup ketchup and cook for 1 minute. Add in 1 pack shredded cheese.

Dinner Tonight - Shabbos 9/14

Due to all the RH preparations, it is a very quiet Shabbos this week. For dinner tonight I am making challah, chumus, apricot sesame roast, shwarma salad, and noodle kugel. For dessert we will have marble cake. Have a beautiful shabbos!!!

Dinner Tonight - Apricot Chicken

For dinner tonight I made apricot chicken. I used morning star farms chick patties in place of the real chicken. Enjoy!


Take chicken cutlets, dip in egg, and then jasons breadcrumbs and fry it. Then you dont even have to wash the pan, and you saute 1 large onion diced, 1 green pepper diced, and 1 8oz can mushrooms.  Once it's all soft, you add 1 cup ketchup 15 oz apricot preserves or jam, and 3T brown sugar. stir until bubbly, pour over shnitzel and bake covered for an hour.

Dinner Tonight - Pastrami over Rice

For dinner tonight I am making Pastrami over rice. It is a quick dish that I think the guys will like. Enjoy!


2 tbs oil 
1 med onion - diced
1 -15 oz can tomato sauce
1/4 cup sugar
2 tbs honey
1/2 lb turkey pastrami - cubed

heat oikl and sautee onion for 10 minutes. Add in sauce, sugar and honey and bring to a boil. Add pastrami and simmer for 1/2 hour. Serve over rice.

Dinner Tonight - Cheese Stuffed Shells

For dinner tonight I am making Stuffed shells.  I have made several different variations over the years. This was a new recipe that I tried which came out delicious. Enjoy!


1 box Jumbo shells- Cooked and drained according to directions
Combine all together and fill with:
2 -12 oz bags shredded mozzarella (put aside 1 cup of it)
15 oz farmer cheese
2 eggs

Place in 9x13 pan
combine
 3 - 15 oz cans tomato sauce
2 tbs brown sugar
garlic powder
oregano
pour over pasta in pan and sprinkle with remaining cheese. Bake covered for 1 hour.

Dinner Tonight - Chicken

You know those recipes you make over and over again until you get so sick of it you never make it again? Well tonight's dinner is one of those! It's a chicken recipe I used to make ALL the time and I totally forgot about it until my sister reminded me of it. Hope you enjoy it as much as I did (for the whole first year I was married ;-).


12 oz Italian dressing
12 oz apricot preserves
2 tbs onion soup mix

combine all together and pour over chicken peices. Bake covered for 2 hours (uncover the last 15 minutes.)

Dinner Tonight - quesadillas

For dinner tonight I am making Quesadillas. They are  quick easy and delicious and can be made in your toaster oven. Enjoy!



2 tbs butter1 med onion - diced
1/2 lb mushrooms - sliced
1 red bell pepper - sliced or diced
1 yellow bell pepper - sliced or diced
1/2 cup shredded mozzarella cheese
8 - 10 inch flour tortillas
salsa
sour cream

preheat oven to 350.  Saute onion in butter for 5 minutes. Add rest of veggies and saute for 10 more minutes. Lay out 4 tortillas, divide veggies on all of them and top with cheese. Top with remaining tortillas and bake for ten minutes. Serve with salsa and sour cream.

Dinner Tonight - Unstuffed cabbage

For dinner tonight I am making unstuffed cabbage. It has all the flavors of regular stuffed cabbage without all the work that's involved.It freezes really well and makes a lovely appetizer.  Enjoy!!!



3 lbs ground beef
2 eggs
1/4 cup water
3/4 cup white rice - uncooked
1 onion finely chopped
salt, pepper, garlic
1 tbs oil
1 head cabbage - shredded ( i used 2 bags)
1 1/2 tbs kosher salt
1 1/2 cup tom juice
4 - (8 oz) cans tomato sauce
1/2 cup brown sugar
1 1/2 cups sugar
1/2 cup lemons

In a large bowl mix together the first 6 ingredients. Set aside . In a large pot heat oil. Add in cabbage and salt and let simmer for 10 minutes. Add in rest of ingredients.  Gently form meat balls (they don't have to be perfect) out of the meat mixture and drop into pot. Simmer for 1 hour covered.

Dinner Tonight - chicken Lo main

For dinner tonight I am making chicken lo main. It is easy and delicious and doesn't take any prep work Enjoy!


1 lb spaghetti cooked according to box
1 lb chicken cutlets cut into small pcs
1 bag stir fry mix
1/2 cup sugar
1/2 cup soy sauce
garlic powder

Saute chicken pcs. until no longer pink.  Add in stir fry mix and cook a couple minutes longer. Add in rest of sauce ingredients and cook on low flame for 10 minutes. Toss with pasta.

Eden Frozen Herb Cubes Review

As a product tester for Kosherscoop.com, I received a shipment from Eden Frozen Herbs and as instructed placed them in the freezer. They sent me five different packs - Parsley, Cilantro, Garlic, Basil, and Dill, I was so excited to use them! I looked for recipes this Shabbos that contained herbs so I could try out as many as possible. I used the garlic in several dishes; easy garlic sugar snap peas, Honey Garlic wings, and salad dressings. I used the parsley and basil in confetti corn and dill in cucumber salad. The herbs were extremely easy to use and tasted just like using fresh herbs. I got rave reviews and it was all eaten up!

Confetti corn:


Ingredients

  • 2 tablespoons good olive oil
  • 1/2 cup chopped red onion
  • 1 small orange bell pepper, 1/2-inch diced
  • 2 tablespoons unsalted butter ( i used margarine) 
  • Kernels cut from 5 ears yellow or white corn (4 cups)
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons julienned fresh basil, minced fresh chives, and/or minced fresh parsley leaves

Directions

Heat the olive oil over medium heat in a large saute pan. Add the onion and saute for 5 minutes, until the onion is soft. Stir in the bell pepper and saute for 2 more minutes.
Add the butter to the pan and allow it to melt. Over medium heat, add the corn, salt, and pepper and cook, stirring occasionally, for 5 to 7 minutes, until the corn just loses its starchiness. Season to taste, gently stir in the basil or other green herbs, and serve hot.


Honey Garlic Wings

2-3 lbs chicken wings (i always have to make at least a double batch!)
pepper to taste
garlic powder to taste

sauce:
1/2 cup honey
1/4 cup soy sauce
1/2 cup ketchup
1/4 cup brown sugar
1-2 cloves garlic - chopped

preheat oven to 350. Spread wings in a roasting pan in a single layer and season with pepper and garlic powder. Bake covered for 45 minutes.
Meanwhile Whisk together sauce ingredients. Take wings out of oven and drain off liquid in pan. Pour sauce over wings and bake on 400 for 20 minutes on each side. 


Cucumber Salad

1/2 cup vinegar
1/2 cup sugar
1/2 cup mayo
1/2 tsp salt
2 tsp fresh dill (or 2 dill cubes)
8 kirbies - peeled and sliced
1/2 med red onion - cut into half moons
4 scallions sliced
Prepare dressing ing together and pour over veggies. combine well and serve - may be prepared a day in advance.
