Dinner Tonight - Chicken Capons

For dinner tonight I am making chicken capons. It is so simple, quick and delicious! It also works great for shabbos day, at room temp, either as an appetizer or for the main course (you can freeze them prepared and just bake them right before shabbos). I am going to make steamed veggies to go with it. Enjoy!




Ingredients
-
1 pkg large puff pastry squares
-
Near east rice pilaf - cooked according to directions on box
-
duck sauce
-
chicken cutlets - cut into small squares

Instructions
Dip cutlets in duck sauce.
Place in the center of a pstry square with a scoop of rice on top.
Bring all four corners of dough together and place on baking sheet seem side down.
Brush with duck sauce and bake on 350 degrees for 30 minutes.

Dinner Tonight - Poached Salmon with Bow Ties

For Dinner tonight I made Poached salmon with bow ties. It's a very light fresh fish so I doubled it to serve for before the fast. Make a salad to go with it and its a complete meal. Enjoy!!!



Cook a box of bow tie pasta according to directions - when drained add in 1 tbs of butter or margarine.

Season 1lb salmon with salt and pepper. Place in a saucepan with 1/4 cup water, zest of 1 lemon, 2 tbs white wine. Bring to a simmer over med heat, cover and steam for 15 minutes. Remove salmon from pan, add 1 tsp cornstarch dissolved in 1 tbs water to the saucepan and stir until thickens. Add in 1 tbs butter or margarine and toss with pasta. Gently flake salmon into small chunks and add to pasta. Sprinkle with parsley.

Dinner Tonight - Sushi Salad

I had a hard time coming up with a dinner for tonight, being that Wednesdays is guys night, I was not sure there was much in the way of dairy that they would eat. I am making Sushi salad with guacamole and chips and veggies and dip. I know its not a very original menu but I think its something they will all eat. Enjoy!



Sushi Salad

-
3 cups sushi rice -cooked according to directions
-
2 tsp rice vinegar
-
a little cooking sherry
-
1/4 cup sugar
-
2-3 tsp oil
-
1 1/4 tsp salt
-
3-4 sheets nori
-
shredded carrots
-
black sesame seeds
-
cucumbers
-
avocado
-
crab

Instructions
After you cook rice add the vinegar, sherry, sugar, oil and salt. let cool . Meanwhile chop up the nori and the veggies and fish. Add to cooled rice




Guacamole
3 ripe Hass Avocados
1/2 cup chunky salsa
1 tsp crushed garlic
2 1/2 tsp lemon juice
1 1/2 tsp kosher salt

Dinner Tonight - Sesame Chicken

For dinner tonight I am making sesame "chicken". I used my reg recipe just substituted the chicken for morning star farms chick patties. It tastes quite authentic! I am going to serve it with rice pilaf and a salad. Enjoy!!!





Ingredients
-
1 chicken or 4 chicken cutlets (cut into small pcs.)
-
1 onion
-
1 cup. brown sugar
-
1 cup ketchup
-
4 cloves garlic
-
sesame seeds


Instructions
sautee onion and garlic. add all other sauce ing's together and place on a low flame until disolved and combined.
Dredge chicken in flour and fry on both sides till browned.
Pour sauce over chicken, sprinkle with sesame seeds and bake for 1 1/2 hours if using whole chicken or 25-30 minutes if using cutlets.

Dinner Tonight - Tuna Patties

For dinner tonight I am making Tuna patties with mashed potatoes and a salad. This is a really simple recipe that everyone loves. It's also great the next day with ketchup on a roll/bagel as a sandwich. Enjoy!!!



Tuna patties

3 cans tuna with liquid
3 eggs
1/2 cup bread crumbs
1/4 tsp pepper

Combine all together and fry until browned on both sides.

Dinner Tonight - Honey Garlic Wings

For dinner tonight I am making wings with Honey Rice. I was going to try a new wing recipe out but was told by the guys not to experiment. This really is the best recipe and they don't want any other. Let me know if you have a favorite wing recipe...maybe next time ill try your!!! Enjoy!



Honey Rice
2 cups rice cooked according to package directions
saute 1/2 green pepper, 1/2 orange pepper. 1/2 red pepper and 1 onion for 15 minutes. Add in 2 cloves garlic minced and mushrooms. saute for 2 more minutes. whisk together 2/3 cup honey and 1/4 cup soy sauce. Pour into rice along with veggies. Serve warm.





2-3 lbs chicken wings (i always have to make at least a double batch!)
pepper to taste
garlic powder to taste

sauce:
1/2 cup honey
1/4 cup soy sauce
1/2 cup ketchup
1/4 cup brown sugar
1-2 cloves garlic - chopped

preheat oven to 350. Spread wings in a roasting pan in a single layer and season with pepper and garlic powder. Bake covered for 45 minutes.
Meanwhile Whisk together sauce ingredients. Take wings out of oven and drain off liquid in pan. Pour sauce over wings and bake on 400 for 20 minutes on each side.

Dinner Tonight Sweet and sour Meat balls

For dinner tonight I am making Sweet and Sour Meatballs.This recipe is a classic; a real crowd pleaser. I am going to serve it with spaghetti and a salad. Enjoy!!!




Meatballs:
2 lbs ground meat
1/2 cup bread crumbs
2 large eggs
3 tbs ketchup
1 tsp onion powder
1 tsp garlic powder
1/2 tsp oregano

combine all together and set aside.

sauce:
16 oz tomato sauce
1 cup water
3/4 cup sugar
1/4 cup brown sugar
1/4 cup lemon juice
1 med onion diced

combine all together in a large pot. Bring to a boil. Roll meat mixture into balls and drop into boiling sauce. Lower flame and simmer for 2 hours.

Dinner Tonight - Shabbos Menu 7/13

I have been a little crazy this week: Catered an engagement party on Monday, My mother-in-law came into town on Tuesday, We have shiur on Wednesday, Made dinner for someone on Thursday night and making a welcome package to send to someone new in town on Friday. Dinner Tonight - Salmon with Dill Dipping sauce

For dinner tonight I am making salmon with a Dill dipping sauce. In addition, I am making rice pilaf and roasted butternut squash. ENJOY!!!




Salmon:

mix a bit of oil with a little lemon juice salt and fresh garlic and pour over salmon. Bake covered for 25 minutes.

dill sauce:
1 cup mayo
1/2 cup sugar
a few tsp lemon juice
enough dill to make green

Dinner Tonight - Shredded Beef Sandwiches

Sorry for the delay ..I was out getting my free Slurpee ;-) For dinner tonight I am making Shredded Beef sandwiches with Home Fries and a salad. Enjoy!



2 lbs roast
1/4 cup brown sugar
1 onion sliced
2 tbs onion soup mix
5 cloves garlic
3/4 cup ketchup
1/2 cup light beer

Place meat in crock pot. Sprinkle with brown sugar, onion slices, soup mix, and garlic. Pour the ketchup and beer over the meat. Cook on high for 5 hours or low for 8-10 . Remove meat and shred with two forks. Strain the liquid and pour half over the shredded meat in the crock pot. Cook on high for 20-30 minutes. Serve in buns or rolls with lettuce tomato and onions.

Dinner Tonight - Roasted Red Pepper cream Pasta

For dinner tonight I am making Roasted Red Pepper Cream pasta. I am serving it with garlic bread and a salad. Enjoy!



1 - 12 oz jar roasted red peppers
2 tbs oil
1 medium onion diced
3 cloves garlic - crushed
salt and pepper
1 cup heavy cream
1 tbs parmesan cheese
1/4 tsp dried basil
1 lb penne pasta cooked and drained

Heat oil and add in onion and garlic, cook until onion is soft. Puree red peppers in blender and add to pot with salt and pepper.  Add cream and bring to a boil. lower heat and add in cheese and basil. cook until sauce thickens. Pour over pasta and top with additional cheese if desired.

Dinner Tonight - Honey Mustard chicken

For dinner tonight I am making Honey - Mustard Chicken. Serve it over orzo or rice. It is a quick delicious meal.



1 1/2 lbs chicken cutlets - cut into strips and seasoned with salt and pepper
3-4 tbs oil
2 large onions diced
red and yellow pepper cut into strips
3 tbs honey
3 tbs soy sauce
3 tbs mustard

Heat oil in a large frying pan. Add onions and cook for 10-15 minutes. Add in chicken strips and cook for 5 minutes. Add peppers, honey, mustard and soy sauce. Cook for 10-15 minutes stirring occasionally.

Dinner Tonight - Texas Chili

For dinner tonight I am making Texas Chili served over spaghetti. It's a simple dish perfect for a Thursday night that i'm busy cooking for the weekend on. Enjoy!!!

Texas Chili:
1 tbs oil
1 lb ground beef
16 oz can tomato sauce
16 oz can red beans - drained
2 tbs vinegar
2 tbs chili powder
2 tbs minced dry onions
1/4 tbs garlic salt


1 lb spaghetti - cooked and drained

Brown beef in oil. Add rest of ingredients and let cook covered on low flame for 45 minutes. serve over pasta.

Dinner Tonight - Baked Chicken Nuggets

Happy 4th of July!!!! For guys night dinner, I am making Baked Chicken Nuggets with chips and guacamole.  I am going to serve it with several sauces to dip it in. Serve it with an ice cold Coke and that's pretty "American" ;-) These are super moist and so much healthier then the fried kind. Hope they enjoy!!!



Chicken Nuggets

1 1/2 lbs chicken cutlets - cut into nugget size
1/4 cup Dijon mustard
3 tbs honey
2 tsp lemon juice
3 cloves garlic - minced
1 cup flavored bread crumbs
cooking spray

combine mustard, honey, lemon juice, and garlic. Add in chicken and marinate in fridge for 1/2 hour.  Dredge in bread crumbs and place on a sprayed cookie sheet. Spray each nugget with cooking spray and bake on 350 for 20 minutes.

Dinner Tonight - Tangy Salmon

For dinner tonight I am making Sweet and Tangy Salmon with Rice Pilaf and corn on the cob. It is another no fuss meal that will not take more then 5 minutes to prepare. Enjoy!



Sweet and Tangy Salmon

1 lb salmon
salt, pepper, onion powder, garlic powder
2 tbs oil
2 tbs lemon juice
2 tbs apricot jam
1 tbs ketchup
1/2 tbs soy sauce

Season salmon with spices. Mix rest of ingredients together to form sauce and pour over salmon. Bake for 10 minutes covered and an additional 10 minutes uncovered.

Dinner Tonight - chicken wraps

For dinner tonight I am making Chicken Wraps. These are quite delicious and very minimal work (5 minutes prep time!!!). Its a great summer dinner when you don't want to be stuck in the hot kitchen all day.  Enjoy!



2 lbs chicken cutlets - cut into strips
1/2 cup oil
1/4 cup onion soup mix
1 large onion
Cesar dressing or mayonnaise
lettuce
tomato
wraps

In a zip lock bag combine oil and soup mix. Add in chicken strips and let marinate in the fridge for 1/2 hour. Heat a saute pan with a bit of oil and saute onions for 10 minutes. Add in chicken and cook for an additional 10 minutes or until chicken is cooked through. Spread dressing or mayo on wrap. Fill with veggies and chicken and roll up. Serve warm.
