Dinner Tonight - Fish Sticks

For dinner tonight I am making homemade fish sticks and lasagna. Add a tossed salad and you have a complete meal! The fish sticks use Fresh Tiliapia and are baked so they are a healthier alternative to the store bought kind. The Lasagna I made with fresh egg roll wrappers (which is the same as fresh pasta) and layered it with cottage cheese and shredded mozzarella cheese and marinara sauce. The wrappers have fewer calories then pasta and a really light taste and texture. Enjoy!


Fish Sticks

2 eggs
1 lb white fish ( I used Tilapia) cut into sticks
1/2 cup corn flake crumbs
1 cup flour
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp. parsley
1 tsp oregano
1 tbs olive

Prepare 3 shallow dishes. 1 with flour 1 with the eggs combined with salt and pepper, and 1 with the corn flake crumbs combined with the rest of the spices. Dip Fish into flour, eggs, crumbs. Place on sprayed cookie sheet and bake for 20 minutes, turning halfway through.

Dinner Tonight - Deli Salad

I know it's been a couple days. There was so much leftovers from Shavuos, I couldn't justify cooking another thing last night! My company left this evening (miss you guys already!) and I am trying to keep it simple so for dinner tonight I made a deli salad with fresh dinner rolls and herbed butter (margarine - parve). Hope the guys will enjoy!


Ingredients
-
2 packages euro salad mix
-
1 box cherry tomatoes
-
¼ lb. turkey breast
-
¼ lb. pastrami
-
1 Tbs. Dijon mustard
-
¼ cup oil
-
¼ cup honey
-
1 tsp. salt
-
¼ cup sugar
-
¼ cup red wine vinegar

Instructions
Mix dressing ingredients together.
Toss salad and dress right before serving.





Ingredients
-
1 cup warm water
-
1/4 oz dry yeast
-
1/4 cup sugar
-
1/8 cup soft margarine
-
1 egg
-
1 tsp. salt
-
3 1/2 cups flour


Instructions
Dissolve yeast and sugar in water.
Add rest of ingrediants and mix well.
Let rise for 1 hour.
Form rolls and brush with egg. Bake for half hour on 350 degrees.

How I did at Publix!!!

Here's how I did at Publix today! I spent $49.52 and saved $448.28. A total savings of 90%!!!! That shop included:

64 containers of Sabra Chumus (donated most of them)
46 packs of Hefty pans
8 packs of Vanity Fair Napkins
14 box's of Morning Star Farms Chick Patties
2 pouches of Mahatma Spanish rice
1 Aluminum Foil
2 bottles of Frenchs Mustard
2 cases (8 in each) of Powerade
2 containers of cool whip
4 jars of Mt. Olive pickles
2 Scrubbing bubbles products
10 bottles Sunkist Sodas

Not too bad!!!

Dinner Tonight Calzones

For dinner tonight I made calzones (pizza for the kiddies).  It's a quick easy meal in the midst of all my shavuos cooking. I served a Caesar salad alongside it. I used my regular pizza dough recipe. Then I sauteed a peppers and onion stir fry mix along with a box of chopped broccoli. I added in shredded cheese and a couple of tablespoons of marinara sauce. Spiced it with salt, pepper and garlic powder, filled the dough and egged the top.

Dinner Tonight - Onion Chicken

Wednesday is guys night!!! For dinner tonight I am making onion chicken with rice pilaf and my brother Mordy's cole slaw. Hope everyone enjoys.


Ingredients
-
6 Chicken cutlets
-
Dijon mustard
-
1 can French's onions - pulverized
-
Italian dressing

Instructions
Preheat oven to 350 degrees.
coat cutlets with mustard and dressing.
Top with onions.
Bake for 40 minutes covered and 5 minutes uncovered.








Ingredients
-
1 bag cole slaw mix
-
½ cup mayonnaise
-
2 Tbs. plus a little vinegar
-
1/3 cup plus a drop of sugar
-
½ tsp. salt


Instructions
Mix dressing together and pour on top of cabbage.
Refrigerate a day in advance before serving.
